What you need:
- 8 oz. pasta
- 1 1/4 lb. turkey
- 1 small onion, diced
- 1 garlic clove, minced
- 1 can (14 oz.) diced tomatoes, darined
- 4 Tbsp. taco seasoning
- 3 oz. cream cheese
- 1/2 cup sour cream
- Shredded cheddar cheese
- Cook and drain pasta - reserving 1/2 cup pasta water.
- Brown turkey over medium heat and then add onion, cooking until tender.
- Add garlic and cook for 30 more seconds.
- Add tomatoes and taco seasoning. Simmer for 5 minutes.
- Reduce heat to medium low and add cream cheese, sour cream, and salt and pepper, to taste. Cook for 3 to 5 minutes.
- Top with cheddar cheese and serve.
