Mexican Chicken

Once upon a time, I was not a fan of cornmeal or cornmeal-crusted anything. I've become much more open to cornmeal, especially in Mexican dishes. This one is just fabulous. I have also quickly become a fan of cilantro. We paired our chicken with Spanish rice and corn.

Mexican Chicken - with a seasoned cornmeal crust and colorful toppings, this chicken stands out on any plate!

What you need:
  • Chicken breasts
  • 1 cup yellow cornmeal
  • 1 cup flour
  • 1 pkg. taco seasoning
  • 2 eggs
  • 1/4 cup oil
  • 3 Tbsp. butter
  • Green onions
  • Monterey Jack cheese
  • Sour cream
  • Salsa
  • Cilantro
Directions:
 
On one plate, combine cornmeal, flour, and taco seasoning. 
In a bowl, whisk together with eggs, salt, and pepper.
Heat oil and butter over medium-high heat in a skillet.
Dip chicken in eggs and then cornmeal mixture. 
 
Cook chicken until golden brown on each side.

Place green onions on the cooked chicken and then top with a few slices of cheese. 
 
Broil until cheese is melted. Then top with cilantro, sour cream, and salsa.
