Tasty Thursday #97: Chicken Scampi

Welcome back to Tasty Thursday!!

Happy Valentine's Day, everyone!

I've always wanted to try scampi. I link up over at My Favorite Finds for Must Try Monday - and was so excited to see a recipe for chicken instead of shrimp that Carrie (the host) was sharing. I actually was not aware that there was a chicken version. I am a big fan of garlic, so I was happy to see that it was one of the main ingredients in this dish.

Chicken Scampi - a delicious, light dish served over pasta.

What you need:
  • 4 to 6 minced garlic cloves
  • 2 Tbsp. fresh parsley
  • 2 Tbsp. oregano
  • 1 tsp. garlic powder
  • 1/2 tsp. salt
  • 1/2 cup olive oil
  • 1/4 cup white wine or chicken broth
  • 1/8 cup lemon juice
  • 2 chicken breasts
Directions:
  1. Mix together all ingredients, except chicken, in a bowl.
  2. Place chicken in an ungreased dish and pour mixture over the top of the chicken.
  3. Bake at 450* for 20 minutes and serve over pasta.

I've only had shrimp scampi before, never chicken. This looks wonderful! I must make it at home sometime. :)
