Happy Valentine's Day, everyone!
I've always wanted to try scampi. I link up over at My Favorite Finds for Must Try Monday - and was so excited to see a recipe for chicken instead of shrimp that Carrie (the host) was sharing. I actually was not aware that there was a chicken version. I am a big fan of garlic, so I was happy to see that it was one of the main ingredients in this dish.

What you need:
- 4 to 6 minced garlic cloves
- 2 Tbsp. fresh parsley
- 2 Tbsp. oregano
- 1 tsp. garlic powder
- 1/2 tsp. salt
- 1/2 cup olive oil
- 1/4 cup white wine or chicken broth
- 1/8 cup lemon juice
- 2 chicken breasts
- Mix together all ingredients, except chicken, in a bowl.
- Place chicken in an ungreased dish and pour mixture over the top of the chicken.
- Bake at 450* for 20 minutes and serve over pasta.

I've only had shrimp scampi before, never chicken. This looks wonderful! I must make it at home sometime. :)
I love garlic, pasta and chicken. Looks like I would like this dinner :)
