Snickerdoodle Pumpkin Bars

What's wonderful about these bars is that they are not only a snickerdoodle cookie, but also pumpkin pie-y, and topped with this amazing cinnamon sugar and pumpkin-flavored chocolate drizzle. It's like a pumpkin pie and a snickerdoodle cookie got married, but on steroids.

I served these up for Thanksgiving Day and you know, it was pretty sweet to have a different dessert other than pie.

Snickerdoodle Pumpkin Bars - a layer of snickerdoodle cookie, topped with pumpkin, topped with cinnamon sugar, and drizzled with pumpkiny chocolate!

What you need:
Snickerdoodle Layer:
  • 3 cups flour
  • 2 tsp. baking powder
  • 1 tsp. salt
  • 2 cups brown sugar
  • 1 cup butter
  • 2 eggs
  • 1 Tbsp. vanilla
Pumpkin Layer:
  • 1 cup sugar
  • 1 stick butter
  • 1 cup flour
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1 tsp. pumpkin pie spice
  • 2 eggs
  • 1 1/2 cup pumpkin puree
  • 2 Tbsp. sugar
  • 2 tsp. cinnamon
  • 1 oz. white chocolate, chopped
  • 1/4 tsp. pumpkin pie spice
For Snickerdoodle Layer: 
Stir together flour, baking powder, and salt.
Stir together brown sugar, butter, eggs, and vanilla.

Mix dry ingredients into wet and then pour into greased 9x13-inch pan. Even with a spatula.

For Pumpkin Layer: 
Cream together sugar and butter.

Add the rest of the ingredients and pour over snickerdoodle layer and smooth out evenly.

For Topping: 
Combine sugar and cinnamon. Sprinkle on top of pumpkin layer.

Bake at 350* for 33 to 40 minutes. Cool completely.

For Drizzle: 
Melt chocolate and add pumpkin pie spice. 
Drizzle over the top and let it cool and harden.
