15-Minute Garlic Butter Ramen

My entire family is obsessed with anime and manga. We watch anything and everything - and read it too! We particularly love Naruto and ramen is featured a lot in the original series (I have yet to watch Shippuden). So this means we have been trying a ton of ramen recipes lately. I think this one is not only the tastiest, but it's the easiest and I think it is everyone's favorite. I absolutely love it because it's buttery and garlicky with fresh ginger and zucchini. That's just plain heavenly if you ask me. Plus it has basil too! I mean this recipe was made for me, I tell you what! The original recipe does not have any meat, but when I first made this (I've made it a few times now and it's already on the meal plan for November), I decided to saute up some pork cut into strips in a little skillet while making the ramen. Yes, I did end up with another dirty pan, but it didn't take any longer to make the recipe and it was such a wonderful addition to it. I know we will eat this recipe often :)

What you need:
  • 2 to 3 packs ramen noodles, discard seasoning packet
  • 6 Tbsp. unsalted butter
  • 4 cloves minced garlic
  • 1-inch piece fresh ginger, peeled and grated
  • 1 Tbsp. white or red miso paste
  • 2 small zucchini, spiralized or grated
  • 1/4 cup low sodium soy sauce
  • 1/4 cup fresh basil, chopped
  • 4 hard-boiled eggs
  • Toasted sesame seeds for serving (optional)
  • Tofu, chicken, beef, or pork, seasoned and cooked (optional)
Directions:
  1. Boil ramen noodles in a pot of salted water for 2 to 3 minutes; drain.
  2. Meanwhile, add butter and garlic to a large skillet and cook over medium heat for 3 to 5 minutes, stirring often.
  3. Add ginger and miso and cook for 1 more minute.
  4. Add zucchini and cook for 2 to 3 more minutes.
  5. Add ramen noodles and toss. Remove from heat.
  6. Add soy sauce and basil and toss.
  7. Divide between bowls and top with eggs, seeds, or meat.

      While the pictures are ugly (I will definitely have to remedy that asap), the recipe for these Garlic Beef & Broccoli Noodle Bowls is mouthwateringly awesome! It's another quick weeknight meal recipe that you will want on rotation. I really would love to try this Tonkotsu Ramen from Binging with Babish - who is one of my favorite food Youtubers (Foodtubers?).
