Chocolate Chip Cookie Muffins

A little sweetness for your morning meal!


I may have talked about this before, but my mom used to make the little pouch of muffins a lot when I was a kid. Every once in a while, I get those little "just add water" mixes when I get the craving. When I feel like making them homemade, I like to try new recipes. These little beauties were such a hit in my house. They weren't a copycat recipe, but definitely one of the better chocolate chip muffins recipes I've tried to date.

What you need:
  • 2 cups all-purpose flour
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/4 cup unsalted butter, softened
  • 1/4 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 eggs
  • 3/4 cup whole milk
  • 1 tsp. vanilla extract
  • 5 Tbsp. mini chocolate chips (or more)
Directions:
  1. In a mixing bowl, whisk together flour, baking powder, and baking soda. 
  2. In a separate bowl, beat together butter and sugars until creamy.
  3. Add eggs and mix until just combined. Then add vanilla and milk and mix until combined.
  4. Slowly, add dry ingredients to wet ingredients and mix until just combined. Fold in chocolate chips.
  5. Pour batter into a 12 cup muffin pan with paper liners.
  6. Bake in a preheated 375 degree oven for 15 minutes or until a toothpick inserted comes out clean.
  7. Cool for 5 minutes before removing to a wire rack.
