Stuff them and slow cook them and then enjoy these super easy stuffed peppers for dinner!
I adore stuffed peppers and try and make them as much as I can. I was intrigued by this slow cooker version, especially since you don't cook the meat beforehand, which is just strange when you're used to cooking everything first before putting it into the pepper. I love recipes where you get a full pepper to yourself instead of half a pepper. Honestly, it's easier to eat a half pepper, but it's easier to stuff a full pepper. As I near the time where I will begin working after 13 years as a stay at home mom, I'm definitely leaning on finding the best slow cooker recipes so I can have them in my arsenal!

What you need:
- 5 large bell peppers (a mix of red, yellow, and orange or whatever you want)
- 1 lb. ground beef or turkey
- 1/2 cup diced yellow onion
- 2 Tbsp. A1 steak sauce
- 8 oz. tomato sauce
- 1 cup brown rice, cooked
- Salt and pepper
- 1 cup shredded Colby Jack or Pepper Jack cheese
- Slice and reserve the tops of the bell peppers. Slice the pepper part off the tops and dice.
- Combine diced bell pepper with uncooked ground beef, onion, steak sauce, tomato sauce, and cooked rice. Season with salt and pepper.
- Stuff each pepper with the mixture and place in the slow cooker.
- Pour around 1/4 cup water into the bottom of the slow cooker and cover.
- Cook on LOW for 6 to 8 hours or HIGH for 4 hours.
- Right before serving, top with shredded cheese and cover until melted.
