This one pot pasta dish can be made with or without the sausage and is mouthwateringly delicious!
I had this recipe saved for a while and wanted to make it, but as I've said before I have some complainers for meatless nights. So I did end up throwing a little Italian sausage into the mix to make everyone happy. It was really so easy and I could make this most times (meatless) whenever I wanted because I pretty much always have the ingredients on hand.

What you need:
- 1 lb. Italian sausage
- 2 Tbsp. unsalted butter
- 4 cloves minced garlic
- 2 cups chicken broth
- 1 cup milk, plus some if needed
- 8 oz. fettuccine
- Salt and pepper, to taste
- 1/4 cup shredded Parmesan cheese
- 2 Tbsp. chopped parsley
- In a large, deep skillet, cook and crumble Italian sausage. Drain and set aside.
- Melt butter in same skillet over medium high heat. Add garlic and cook for 1 to 2 minutes or until fragrant.
- Add chicken broth, milk, and fettuccine. Season with salt and pepper.
- Bring to a boil, then reduce heat to low and simmer until pasta is cooked all the way, about 18 to 20 minutes. Stir occasionally.
- Once pasta is cooked, add Parmesan and cooked sausage and stir. If it is too thick, add a little more milk.
- Serve topped with parsley.
