What better way to enjoy your vegetables than roasted and served with a cheese sauce?
I'm really happy to share this recipe finally, although I have to say, I wish the pictures were better. It's hard to get pictures of anything that's got a cheese sauce and make it look halfway appetizing. However, don't let the pictures deter you, this au gratin is slamming! I personally love brussels, so I'm not sure someone who wouldn't like brussels would agree. However, if you want to try something new, I highly recommend this. I served this up at Thanksgiving last year and I wish I made it more often because it's so easy to make and...again....it's slamming!
What you need:
- 1 lb. brussels sprouts
- Salt and pepper
- Olive oil nonstick cooking spray
- 1/2 Tbsp. unsalted butter
- 1/3 cup finely chopped shallots
- 2 cloves minced garlic
- 2 tsp. all purpose flour
- 3/4 cup milk
- 1 tsp. fresh thyme
- 1 Tbsp. shredded Parmesan cheese
- 1/4 cup shredded Gruyere cheese
- Grease a small casserole dish with nonstick spray. Cut brussels in half and place in dish. Spray with nonstick spray and season with salt and pepper.
- Roast in a preheated 400 degree oven for about 15 minutes. Stir and roast for an additional 10 minutes.
- Meanwhile, in a small saucepan, add butter and melt over medium heat.
- Add shallots and garlic and saute for about 4 to 5 minutes.
- Add flour and whisk. Cook for about 1 minute, stirring.
- Slowly whisk in milk and then lower heat. Let thicken while stirring occasionally for about 3 to 4 minutes.
- Add thyme, Parmesan, and half of the Gruyere. Let cheese melt and season with salt and pepper.
- Pour over the top of the brussels and then top with remaining Gruyere.
- Bake for 10 to 15 more minutes at 400 degrees. Serve immediately.
