Brussels Sprouts Au Gratin

What better way to enjoy your vegetables than roasted and served with a cheese sauce?


I'm really happy to share this recipe finally, although I have to say, I wish the pictures were better. It's hard to get pictures of anything that's got a cheese sauce and make it look halfway appetizing. However, don't let the pictures deter you, this au gratin is slamming! I personally love brussels, so I'm not sure someone who wouldn't like brussels would agree. However, if you want to try something new, I highly recommend this. I served this up at Thanksgiving last year and I wish I made it more often because it's so easy to make and...again....it's slamming!


What you need:

  • 1 lb. brussels sprouts
  • Salt and pepper
  • Olive oil nonstick cooking spray
  • 1/2 Tbsp. unsalted butter
  • 1/3 cup finely chopped shallots
  • 2 cloves minced garlic
  • 2 tsp. all purpose flour
  • 3/4 cup milk
  • 1 tsp. fresh thyme
  • 1 Tbsp. shredded Parmesan cheese
  • 1/4 cup shredded Gruyere cheese
Directions:
  1. Grease a small casserole dish with nonstick spray. Cut brussels in half and place in dish. Spray with nonstick spray and season with salt and pepper.
  2. Roast in a preheated 400 degree oven for about 15 minutes. Stir and roast for an additional 10 minutes.
  3. Meanwhile, in a small saucepan, add butter and melt over medium heat.
  4. Add shallots and garlic and saute for about 4 to 5 minutes.
  5. Add flour and whisk. Cook for about 1 minute, stirring.
  6. Slowly whisk in milk and then lower heat. Let thicken while stirring occasionally for about 3 to 4 minutes.
  7. Add thyme, Parmesan, and half of the Gruyere. Let cheese melt and season with salt and pepper.
  8. Pour over the top of the brussels and then top with remaining Gruyere.
  9. Bake for 10 to 15 more minutes at 400 degrees. Serve immediately.
