Southwest Chopped Chicken Salad

Salads are some of my favorite dinners - especially when they have all the things like chicken, tomato, beans, corn, avocado, and more!

This salad is nothing extremely unique or something that will blow anyone's mind, but it is a fantastic, quick dinner and I really enjoyed it. The original recipe came with a salad dressing, however, I'm about the only person who eats dressing in the house and depending on how busy the day is that I'm making the recipe, I'll skip making the dressing and grab the premade kind. Still...a great recipe for dinner. Lots of fixings and you can add a little extra flavor if you get tortilla chips with kick of lime :)


What you need:

  • 6 cups chopped lettuce
  • 6 cups cubed, cooked chicken (I seasoned mine with salt, pepper, and garlic)
  • 1 can corn, drained
  • 1 can black beans, rinsed and drained
  • 2 roma tomatoes, diced
  • 1 avocado, diced or sliced
  • 1/2 red onion, diced
  • 3/4 cup shredded cheddar cheese
  • 1 cup crushed tortilla chips
  • Cilantro, chopped
  • Dressing like Southwest ranch, avocado lime, etc.

Directions:

  1. Toss together ingredients and serve!
  2. If you aren't serving immediately, wait to add tortilla chips and dressing.

I love salads with chicken and I try to make them often, including this Copycat Chick-fil-A Cobb Salad. It's my favorite of the Chick-fil-A salads! This Tex-Mex Chicken Chopped Salad from Life in the Lofthouse is really similar to this one with a homemade salad dressing!

Ingredients

  • 6 cups chopped lettuce

Instructions

  1. Toss together ingredients and serve!
  2. If you aren't serving immediately, wait to add tortilla chips and dressing.
