Bacon Cheeseburger Sloppy Joes

Sloppy Joes have never been better with this slow cooked version with lots of cheese and bacon!

I have found more and more that I am beginning to be okay with Velveeta cheese as long as it's not pure Velveeta. In this recipe, it goes in with garlic and beef and bacon into a slow cooker. I admit I still usually add a couple dabs of hot sauce to cut through that artificial flavor a bit. I loved sloppy joes as a child, so I really appreciate this recipe because it's a sloppy joe, but it tastes like a bacon cheeseburger. It's like an adult sloppy joe if that was a thing!? :)

What you need:

  • 1 1/2 lb. ground beef
  • 1 Tbsp. minced garlic cloves
  • 8 oz. Velveeta cheese, cut into cubes
  • 1/2 cup diced onion
  • 1 pkg. bacon bits
  • Salt and pepper to taste
  • 6 hamburger buns
  • Lettuce
  • Sliced tomatoes
  • Pickles

Directions:

  1. Cook ground beef over medium-high heat until browned and crumbled. Add garlic in the last little bit of cooking so it doesn't burn. Drain, if needed.
  2. Add ground beef to a slow cooker that has been greased with nonstick spray.
  3. Add Velveeta, onion, bacon, and salt and pepper. Stir to combine.
  4. Cook on LOW for 5 to 6 hours or on HIGH for 2 hours. Stir occasionally, if possible. Stir well before serving.
  5. Serve hamburger buns topped with lettuce, tomato, and pickles and a good scoop of the beef mixture.
