Hot Bean & Cheese Dip

Reminiscent of 7-Layer Dip, this dip is so quick to throw together and is perfect for a get-together!


This is a recipe I made for New Year's Eve 2019. I typically try to make at least one dip of some sort. This recipe immediately reminded me of 7 Layer Dip and I really wanted it for NYE. The thing that sets this apart a little bit is that there is no sour cream which is something my husband would not eat if he could see. It's really quick to put together and doesn't bake for too long. It's like eating a taco but in dip form and it's so fantastic!

What you need:

  • 1 block (8 oz) cream cheese, slightly softened
  • 1/2 cup salsa (your desired heat level - we went spicy)
  • 1 can (16 oz.) chili beans (your desired heat level)
  • 2 cups shredded Colby Jack cheese
  • 2 green onions, chopped
  • 1 tomato, diced
  • Tortilla chips, pretzel crisps, or veggies for serving

Directions:

  1. In an oven safe baking dish, spread cream cheese into a thin, even layer.
  2. Spread salsa over the top of the cream cheese.
  3. Drain off some of the liquid in the chili beans (about half) and pour over the top of the salsa.
  4. Top with cheese.
  5. Bake in a preheated 350 degree oven for 15 to 20 minutes.
  6. Remove from oven and top with green onions and tomatoes.
  7. Serve with desired dipping food!

I love a dip that isn't just queso (not saying queso is bad by any means haha) so I loved this White Chicken Chili Dip. Speaking of queso though, this Spicy Queso Dip with Hummus from Fannetastic Food is one I highly recommend. We had it for NYE 2020.
