Butter Garlic Chicken Bites with Lemon Asparagus

This chicken and asparagus recipe is incredible with butter, garlic, and lemon!

I love recipes that seem so simple but end up blowing my mind. I know going in that I was going to like this recipe because it's butter, garlic, and lemon. Honestly, how can you go wrong?! This is definitely one of my all-time favorites because it's simple but it's so dang good. I love it. This one doesn't take a lot of effort or time to make. You can pair it with a good crusty bread and potatoes or a salad, etc.

What you need:

  • 3 boneless, skinless chicken breasts, cut into bite-sized pieces
  • Salt and pepper to taste
  • Onion powder
  • 1/2 cup unsalted butter, at room temperature, divided
  • 1 tsp. olive oil
  • 2 tsp. minced garlic cloves, divided
  • 1 tsp. Italian seasoning
  • 1/2 cup chicken broth
  • Juice of 1/2 lemon
  • 1 Tbsp. hot sauce
  • 1 Tbsp. minced parsley
  • 2 bunches asparagus, trimmed and cut into 1-inch pieces
  • Crushed red pepper flakes
  • Slices of lemon

Directions:

  1. Season chicken with salt, pepper, and onion powder.
  2. Heat half of the butter (4 Tbsp. or 1/4 cup) with the olive oil over medium low heat and cook the chicken until golden brown on each side and cooked through.
  3. Reduce heat and add half the garlic and all of the Italian seasoning and cook until fragrant. Remove chicken and set aside.
  4. Increase heat to medium-high and add remaining garlic. Deglaze pan with chicken broth and bring to a simmer. Reduce by half.
  5. Add remaining butter (4 Tbsp. or 1/4 cup), lemon juice, hot sauce, and parsley and stir to combine.
  6. Add asparagus and cook for another 2 minutes.
  7. Add chicken back to the pan and cook for an additional minute to reheat.
  8. Serve chicken topped with a bit more parsley, crushed chili pepper flakes, and lemon slices.

I absolutely love this One Pan Creamy Lemon Pasta with Chicken and Asparagus - it's one of my all-time favorites. For more lemony goodness, this One Pan Lemon Parmesan Chicken and Asparagus from Chelsea's Messy Apron has all the lemon, chicken, asparagus goodness but with a crunch of panko too.
