Salty Caramel Cookies

Rich semisweet chocolate cookies with dark chocolate and caramel bits inside and a topping of flaky sea salt.

I don't make chocolate cookies a whole lot because I find that I'm not a fan of many of the recipes I've tried. I love these chocolate cookies a ton though. I think partially because of how they are done. Instead of cocoa powder, you melt semisweet chocolate with butter for the chocolatey base. I think it makes all the difference. I love the bits of dark chocolate and caramel inside it and I also absolutely adore the flaky sea salt on top! It's the perfect combination of rich chocolate and salt!

What you need:

  • 16 oz. semisweet Ghirardelli chocolate
  • 4 Tbsp. unsalted butter, room temperature
  • 1 3/4 cups brown sugar
  • 4 eggs
  • 1 Tbsp. vanilla extract
  • 1/2 cup + 2 Tbsp. all purpose flour
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1 Ghirardelli Sea Salt Soiree bar, coarsely chopped
  • 16 soft caramels, chopped into small bits
  • Sea salt for garnish

Directions:

  1. In a double boiler, melt chocolate and butter together until smooth. Set aside to let cool.
  2. In a stand mixer, beat together sugar and eggs. Add vanilla and cooled melted chocolate and mix until incorporated.
  3. In a small mixing bowl, whisk together flour, baking powder, and salt.
  4. Add dry ingredients to wet ingredients on low speed and mix until just combined.
  5. Fold in chopped chocolate bar and caramel bits.
  6. Chill in refrigerator for at least 45 minutes.
  7. Scoop 2-inch balls onto a parchment paper or silicone mat-lined baking sheet. Sprinkle with sea salt.
  8. Bake in a preheated 350 degree oven for 15 to 17 minutes or until edges look set.
  9. Cool on baking sheet for 5 to 10 minutes and then remove to a wire rack.
