Eggplant Parmesan Boats

On a quest to be successful at eggplant parmesan, I found these easy and delicious eggplant parmesan boats!

One of my favorite dishes of all-time is the eggplant parmigiana at Olive Garden. I haven't been in years and I think even when I did go, it was once a year. I always get the eggplant parmigiana and that's because I have been unsuccessful with making it at home. I've almost worked up the nerve to try again, but until then, I really liked this "cheat" version where there's no breading or frying but still the flavors of eggplant parmesan.

What you need:

  • 2 medium eggplants, cut in half lengthwise
  • 1/2 Tbsp. olive oil
  • 1/2 lb. Italian sausage
  • 1 small onion, diced
  • 2 cloves minced garlic
  • 2 cups marinara sauce 
  • Salt and pepper to taste
  • 1 cup shredded mozzarella cheese
  • 1/4 cup shredded Parmesan cheese
  • Fresh basil for garnish

Directions:

  1. Scoop the inside of the eggplants leaving about half an inch around the sides. Dice the eggplant you scooped out and set aside.
  2. Brush the inside of the eggplant shells with olive oil. Roast in a preheated 400 degree oven for about 10 to 15 minutes (facing up). Set aside.
  3. Meanwhile in a skillet over medium heat, cook sausage and onion for about 10 minutes.
  4. Add garlic and cook for another minute.
  5. Add chopped eggplant and cook for about 5 to 8 minutes or until tender.
  6. Add 1 cup of marinara and season with salt and pepper. Heat for 3 to 5 minutes.
  7. In the bottom of a baking dish, spread remaining 1 cup marinara sauce.
  8. Place eggplant shells on top of marinara in baking dish. Fill with sauce and top with cheeses.
  9. Bake in the preheated 400 degree oven for 10 to 15 minutes.
  10. Garnish with basil and serve.
