Churro Bars

Delicious bars with loads of cinnamon sugar that taste just like a churro!

I have yet to have an actual churro but I have many churro-flavored treats or things that resemble churros in some way - there's a Cinnamon Toast Crunch churro cereal that is so good! I love dessert bars and these are great. Lots of cinnamon sugar goodness!

What you need:

  • 1 cup (2 sticks) unsalted butter
  • 2 cups brown sugar
  • 2 large eggs
  • 2 tsp. vanilla
  • 1 1/2 tsp. baking powder
  • 1 tsp. salt
  • 2 1/2 cups all purpose flour
  • 1/4 cup granulated sugar
  • 1 Tbsp. ground cinnamon

Directions:

  1. In a medium saucepan, melt butter over medium-low heat and bring to a boil. Stir until it turns an amber color. Remove from heat and let cool for 20 minutes.
  2. In a large bowl, mix together cooled browned butter and brown sugar.
  3. Add eggs, vanilla, baking powder, and salt. Stir until smooth.
  4. Add flour and mix until just combined.
  5. In a small bowl, whisk together granulated sugar and cinnamon.
  6. Add foil to a 9x13-inch pan and coat with nonstick spray.
  7. Sprinkle half the cinnamon sugar into the prepared pan.
  8. Press dough into the pan. Then sprinkle with the rest of the cinnamon sugar.
  9. Bake in a preheated 350 degree oven for 25 to 30 minutes or until edges are lightly golden brown.
  10. Let cool on a wire rack before cutting.
