The Best M&M Cookies

Soft and chewy M&M cookies perfect for packing in school lunches or snacking on in the afternoons!

I love pudding mix cookies - they are turn out so soft and chewy! I stumbled upon these while trying to find a recipe that I could possibly con my picky 6 year old into eating (back when he was 5). Mason loves M&Ms, so I figured I might be able to convince him to eat these. Of course, he loved them and it opened the door to him trying a lot of different cookies without hesitation!

What you need:

  • 3/4 cup (1 1/2 sticks) unsalted butter, at room temperature
  • 1 cup light brown sugar
  • 1 large egg
  • 1 tsp. vanilla
  • 1 box (3.4 oz) instant vanilla pudding mix
  • 3/4 tsp. baking soda
  • 1 tsp. salt
  • 2 cups all purpose flour
  • 1 1/2 cup mini M&Ms plus some for garnish

Directions:

  1. In a large bowl or stand mixer bowl, beat together butter and brown sugar until combined.
  2. Add egg and vanilla and mix until smooth, scraping sides as needed.
  3. Mix in vanilla pudding, baking soda, and salt until just combined.
  4. Add flour and mix until just combined.
  5. Stir in M&Ms.
  6. Place scoops of cookie dough onto a parchment paper-lined or silicone mat-lined baking sheet about 2 inches apart. Top with additional M&Ms.
  7. Bake in preheated 350 degree oven for 9 to 11 minutes or until edges begin to turn golden brown.
  8. Cool on baking sheet for 3 to 4 minutes then move to a wire rack to cool.
