Linguini Carbonara

Rich classic carbonara with linguine pasta, peas, and bacon.

Matthew (my oldest) would eat carbonara every single day if he could. So we have it for dinner often and I have saved different recipes to try (my favorite is pesto carbonara). This is very much so a classic carbonara and really easy to make. It's so rich and full of flavor.

What you need:

  • 8 oz. linguine pasta
  • 4 slices bacon
  • 2 egg yolks
  • 1/2 cup shredded Parmesan (plus some for serving)
  • 4 cloves minced garlic
  • 1/2 cup peas (fresh or frozen0
  • 1/3 cup heavy cream
  • Salt and pepper to taste

Directions:

  1. Cook linguine in boiling salted water according to package directions. Prep other ingredients while pasta cooks. As soon as it's done, you will combine them and you want the pasta to be hot to cook the eggs. You can reserve a little pasta water if needed.
  2. While pasta cooks, make bacon in a skillet and drain on a paper towel. Reserve 1 Tbsp. grease. Crumble bacon.
  3. While pasta cooks and bacon is cooking, combine egg yolks and Parmesan in a small bowl.
  4. When bacon is finished, cook peas and garlic for about 2 minutes in the reserved 1 Tbsp. bacon grease.
  5. When pasta is done cooking, drain. Immediately toss in cheese and egg mixture, stirring vigorously. 
  6. Add cream, bacon, peas, and garlic. Season with salt and pepper.
  7. If needed, loosen up with reserved pasta water. Serve with additional Parmesan.
