Mom's Tacos

These were unbelievably delicious! I cannot even describe their amazingness - you have to try them!!! The Rotel was a perfect mix-in for the regular taco mix :) Also, it's hard to photograph soft shell tacos!!

What you need:
  • 1 tbsp. olive oil
  • 1 cup chopped sweet onion
  • 1/2 lb. ground turkey
  • 1/2 lb. ground beef (I used all beef)
  • 1 tsp. chili powder
  • 1 tsp. cumin
  • 1/2 tsp. garlic powder
  • 1/2 tsp. dried oregano
  • 1/2 tsp. salt
  • 1/4 tsp. freshly ground black pepper
  • 1 (15.5 oz.) can chili beans (or any beans), drained (I omitted this time, but will try next time!)
  • 1 (10 oz.) can Rotel
  • 10 to 12 tortillas, warmed
  • Taco fixings (lettuce, tomato, sour cream, cheese, etc.)
Directions:

Saute onions until tender in olive oil over medium-high heat.
Add meat and cook until browned.

Mix dry ingredients into a small bowl and sprinkle over meat.

Pour chili beans and Rotel. Heat for 10 more minutes.

Fill tortillas and top with desired fixings.
