Sweet & Sour Chicken

I've been craving some hibachi-style food lately. I decided to make some Chinese food with it too.
I love sweet & sour chicken so much, but I've never made it at home. 
This recipe was really simple and it was so delicious!!

What you need:
  • 1 lb. boneless, skinless chicken breasts, cubed
  • 1 egg white
  • 1/2 tsp. kosher salt
  • 2 tsp. cornstarch
  • 1 (10 oz.) can pineapple chunks, save juice
  • 1/4 cup pineapple juice (from the can)
  • 1/4 cup white vinegar
  • 1/4 cup ketchup
  • 1/2 tsp. kosher salt
  • 2 to 3 tbsp. brown sugar
  • 1 tbsp. + 1 tsp. cooking oil
  • 1 red bell pepper, cut into 1" chunks (I also used green bells)
  • 1 yellow bell pepper, cut into 1" chunks
  • 1 tsp. grated fresh ginger
Directions:
Combine chicken, egg white, salt and cornstarch in a small bowl. 
Stir and let sit for 15 minutes at room temperature.

In a separate bowl, whisk together the pineapple juice, vinegar, ketchup, salt and brown sugar.
Heat a large pan on high heat (Lori adds that it is extra important for the pan to be hot) until water sizzles and add 1 tbsp. cooking oil. Add chicken in one layer.

Fry for one minute and then flip for another minute. Remove chicken, leaving as much oil in the pan as possible.Turn stove down to medium heat and add 1 tsp. cooking oil. After oil is heated, add peppers and ginger. Fry for one minute. Add pineapple and sweet and sour sauce. Turn to high heat.

When the sauce starts simmering, add the chicken back to the pan. Simmer for 1 to 2 minutes. 
 Check chicken and cook for a minute at a time, until no longer pink.
