Fruit Nachos

Here's yet another recipe I've had for quite possibly a decade, but never got around to making. As per my 2012 "resolutions" - I want to eat more fruit. I thought that this would be an "eh" recipe, but it turned out to not only be completely epicly delicious - it was also really easy to make. Really quick too!

(Print)
What you need:
  • 1 pkg. flour tortillas
  • 1/2 cup sugar
  • 1 tsp. ground cinnamon
  • Cooking spray
  • 1 container yogurt, any flavor (we used strawberry)
  • Sliced fresh fruit (we used bananas - I forgot my kiwis)
  • Fresh berries (blueberries, strawberries, etc.)
Directions:
  1. Mix together sugar and cinnamon in a small bowl.
  2. Slice tortillas into 8 wedges using a pizza cutter.
  3. Place wedges on baking sheets.
  4. Spray with nonstick cooking spray and sprinkle with cinnamon-sugar.
  5. Bake at 375* for 5 to 7 minutes.
  6. Remove chips to cool on a wire rack. I did mine in batches.
  7. Drizzle with yogurt and top with fruit. Serve immediately.

Oooh Ive been making these for awhile ago and they are always a hit! I like to cut the fruit up into tiny pieces so its more like a salsa to pile on top! :)
