Lemon Chicken

Again with the lemon kick - I tell you what! I love lemons now. Love love love them. I love lemon + garlic together. The combination is out of this world. This chicken was fantastic. I had accidentally used the chicken breasts for this early on in the week, so I had to use some frozen chicken tenderloins, but it still worked out perfectly fine and they were delicious!

What you need:
  • 1/4 cup extra virgin olive oil
  • 3 tbsp. garlic, minced
  • 1/3 cup chicken broth
  • 1 tbsp. lemon zest
  • 2 tbsp. lemon juice
  • 1 1/2 tsp. oregano
  • 1 tsp. thyme
  • Salt and pepper
Directions:

In a small saucepan, combine oil and garlic. Cook for 1 minute on medium low heat.

Add broth, zest, juice, oregano, thyme, and salt and pepper.

Pour into a 9x13-inch pan. Add the chicken.
Brush the tops of the chicken with olive oil. Salt and pepper them, to taste.
Cut 1 lemon into wedges and add around the chicken.

Bake at 400* for 30 to 40 minutes.
