Silver Dollar Blueberry Sour Cream Pancakes

It's a rarity that I am actually awake and a person before my husband comes home after PT in the morning that I make a fresh breakfast. Some days I make cinnamon rolls the night before (rare), some days I may make a fried egg sandwich for him, but most days it's cereal. I was so excited when I had woken up early and had these little pancakes done before he would get home - and wouldn't you know it..that was the day he had to stay through PT because they had a ruckmarch. CURSES!

That night, he came home and before he tried the pancakes, he sniffed them and accusingly asked "What's in these?" He thought it smelled like a lot of butter and I finally admitted it was sour cream, so he didn't try them. I thought they were the best - they melted in my mouth - you can eat a ton of them with no guilt.

What you need:
  • 2 eggs, beaten
  • 1 cup sour cream
  • 1/3 cup flour
  • 1 tbsp. sugar
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1/2 cup blueberries (or more)
Directions:

Stir together beaten eggs and sour cream.

Add flour, sugar, baking soda, and salt. Whisk until combined.

Add batter to a preheated skillet or griddle by the tablespoon and top with blueberries.

Flip after top becomes bubbly, cook until golden brown on each side.
