Pan-Roasted Chicken with Lemon Garlic Green Beans and Potatoes

I have seen this on Pinterest over and over again. I pinned it and then forgot about it. I've been trying to meal plan from Pinterest more and more, so I decided it was finally time to make this. It was really good. I didn't find the baby red potatoes, like the recipe stated, so I used half the amount with regular sized red potatoes. We thought it was a bit too many potatoes and we want to add more green beans. There is just something so satisfying about eating fresh green beans!

What you need:
  • 6 Tbsp. olive oil
  • 2 lemons, 1 sliced, 1 juiced
  • 4 garlic cloves, minced
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 3/4 lb. fresh green beans
  • 8 small red potatoes, quartered
  • 4 chicken breasts (I sliced mine in half)
Directions:

Place 1 Tbsp. olive oil in the bottom of a casserole dish. Add lemon slices to the bottom.

Mix together oil, lemon juice, garlic, and salt and pepper in a bowl.
Toss green beans with lemon juice mixture. Remove and place on top of lemon slices.

Toss potatoes with lemon juice mixture. Remove and place on top of green beans.
Toss chicken with lemon juice mixture. Remove and place on top of potatoes.
Pour remaining sauce over chicken.

Roast at 400* for 50 minutes.
Remove chicken and roast for another 10 minutes or until potatoes are 
golden brown with a crispy crust!
