What you need:
- 1 cup chicken, diced and cooked
- 1/2 cup mozzarella cheese
- 2 Tbsp. cheddar cheese
- 1/4 cup hot sauce
- 4 Tbsp. butter, melted and cooled
- 2 1/4 tsp. yeast
- 2 Tbsp. brown sugar
- 1 cup warm milk
- 2 1/2 cups flour
Combine chicken, cheeses, hot sauce, and butter and set aside.
Proof yeast in warm milk until bubbly and foamy, about 5 minutes.
Place sugar and flour into the bowl of your stand mixer.
Add yeast mixture to mixer and mix until ball forms.
Knead with dough hook for 5 to 7 minutes. Cover and let rest for 2 hours.
Cut dough into 4 portions. Roll into 12-inch ropes. Flatten into 12x4-inch rectangles.
Spread 1/4 of chicken mixture in center of rectangle. Roll up and cut into 12 pieces. Repeat with remaining dough and chicken mixture.
Let rest for 30 minutes on your parchment-lined baking sheet.
Cook at 400* for 5 to 7 minutes.

I made these over the summer & never blogged them (I didn't take decent pics). I agree, they're a lot of work.
