Buffalo Chicken Bites

We paired these with some cheesy breadsticks for dinner. They weren't necessarily the quickest thing to make, but they were good. Not overly spicy for the kids and it made a ton of them, so we didn't just have a few and were still hungry.

What you need:
  • 1 cup chicken, diced and cooked
  • 1/2 cup mozzarella cheese
  • 2 Tbsp. cheddar cheese
  • 1/4 cup hot sauce
  • 4 Tbsp. butter, melted and cooled
  • 2 1/4 tsp. yeast
  • 2 Tbsp. brown sugar
  • 1 cup warm milk
  • 2 1/2 cups flour
Directions:

Combine chicken, cheeses, hot sauce, and butter and set aside.

Proof yeast in warm milk until bubbly and foamy, about 5 minutes.

Place sugar and flour into the bowl of your stand mixer.
Add yeast mixture to mixer and mix until ball forms.

Knead with dough hook for 5 to 7 minutes. Cover and let rest for 2 hours.

Cut dough into 4 portions. Roll into 12-inch ropes. Flatten into 12x4-inch rectangles.

Spread 1/4 of chicken mixture in center of rectangle. Roll up and cut into 12 pieces. Repeat with remaining dough and chicken  mixture.

Let rest for 30 minutes on your parchment-lined baking sheet.
Cook at 400* for 5 to 7 minutes.

I made these over the summer & never blogged them (I didn't take decent pics). I agree, they're a lot of work.
