Lately, I've been running out of main dish recipes that aren't pasta or carb-heavy. I've been trying to keep it to one carb heavy dinner per week and that can be a bit difficult at times. For some reason, I always forget about meatloaf. My family likes meatloaf with veggies in it, so you can't go wrong with a hunk of meat and veggies for dinner with some veggies for sides. Not carb heavy at all and everyone is happy.
I have never tried turkey meatloaf but I really wanted to. I've been using a lot more ground turkey lately and it's such a great meat to use! This recipe was amazing. I think what really set it apart from other meatloaves I've tried is the milk and bread crumb mixture. The outcome is a very melt-in-your-mouth type texture overall and it's incredible :) The cubes of cheese throughout the meatloaf also set it apart from any other meatloaf I've ever had and I don't think I could honestly make another meatloaf without wishing it had cheese cubes in it!

What you need:
- 3 lb. ground turkey
- 1 Tbsp. canola oil
- 1 small onion, diced
- 1 1/4 cup milk
- 1 1/4 cup Italian seasoned bread crumbs
- 2 eggs
- 1 to 2 carrots, peeled and diced
- 1 tsp. salt
- 1/2 tsp. ground pepper
- 3/4 lb. cheddar cheese, cut into 1/2-inch cubes
- Ketchup, if desired
- Saute onion in canola oil until transparent.
- Meanwhile, mix milk and bread crumbs together and let sit.
- In a large bowl, mix together turkey and eggs with your hands. Add onions, bread crumb mixture, carrots, and salt and pepper.
- Fold in cheese and transfer to two greased loaf pans.
- Top with ketchup prior to cooking, if desired.
- Bake for one hour in a 400* oven. Let cool 15 minutes before slicing.
