I have fallen in love with quinoa, but I've only made it with a savory dish. I decided it was well overdue for quinoa to appear in a breakfast recipe. Looking at this, it reminded me a lot of oatmeal, so I was confident that I would enjoy it and I was correct. I typically don't like honey, but it was the perfect way to sweeten up this little bowl of goodness - no grittiness from granulated sugar.

What you need:
  • 2 cups milk
  • 1/2 tsp. cinnamon
  • 1 vanilla bean, seeded or 1/2 tsp. vanilla
  • 2 cups cooked quinoa
  • 1 cup blueberries
  • 1/4 cup sliced almonds
  • Honey
Directions:
  1. Whisk together milk, cinnamon, and vanilla bean seeds/or extract.
  2. Divide quinoa between 4 serving bowls. 
  3. Divide milk mixtures between the 4 bowls and top with blueberries and almonds.
  4. Drizzle with honey and serve.

I adore this PB&J Crumble Yogurt Parfaits recipe that also contains blueberries. It's a great breakfast meal! I want to try all the quinoa breakfast recipes including this Berry Quinoa Breakfast Bowl from Skinny Taste.
