I'm on a roll for posting with Sunday Supper Movement and today's event is EASY TACO RECIPES FOR NATIONAL TACO DAY. National Taco Day is coming up on October 4th and although my family won't be celebrating on Wednesday, we will definitely be raising a taco up in celebration on Tuesday. I normally stick to just ground beef and a packet of taco seasoning, plus the fixings for Taco Tuesdays, but occasionally, I like to mix it up a little bit and make a recipe from scratch.

What I love about these 1970s Style Tacos is that they do taste like an authentic old-fashioned taco recipe. The cayenne is optional, although I didn't list it as such because I love a hint of spiciness in my tacos! But overall, these are seriously wonderful and they aren't painstakingly difficult nor do they require much more steps than making "regular tacos" - the payoff is definitely worth making them with multiple spices rather than a premade packet of seasonings.

What you need:
  • 1 Tbsp. olive oil
  • 1 small onion, diced
  • 3 cloves minced garlic
  • 1/3 cup tomato paste
  • 1/4 tsp. cayenne pepper
  • 4 tsp. chili powder
  • 1 lb. ground beef
  • Flour tortillas
For serving:
  • Refried beans
  • Shredded lettuce
  • Diced tomatoes
  • Green onions, chopped
  • Shredded cheddar cheese
  • Lime wedges
  • Sour cream
Directions:
  1. Heat olive oil over medium heat in a large skillet. Then add onion and cook for 4 to 5 minutes.
  2. Add garlic and cook until fragrant, about 1 more minute.
  3. Add tomato paste, cayenne, and chili powder. Stir and cook until fragrant.
  4. Add ground beef and stir. Cook and crumble for about 7 to 8 minutes.
  5. Serve topped with refried beans, lettuce, tomato, green onion, cheese, and sour cream plus lime wedges on the side.
