The perfect fall soup with ham, bacon, beer, and loads of cheese!
I am not stranger to beer cheese soup and it's one of my favorite soups to make in the fall. I'm in love with this one in particular because it has two proteins - ham and bacon. Plus green onion and loads of cheese! The combination is just total comfort food. It's a bonus that it is one pot and can be made in under 30 minutes.

What you need:
For the soup:
- 4 Tbsp. unsalted butter
- 1 small onion, diced
- 2 cloves minced garlic
- 1/2 cup all purpose flour
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 3/4 tsp. dry mustard
- 1 bottle wheat beer
- 2 cups chicken broth
- 2 cups whole milk
- 6 oz. shredded sharp white cheddar
- 6 oz. shredded yellow cheddar
- 2 tsp. Worcestershire
- 2 cups diced ham
- Cooked and crumbled bacon
- Diced green onions
- Shredded cheddar
- In a large stockpot over medium heat, melt butter completely. Then add onion and garlic and cook for about 5 minutes until softened and slightly golden.
- Then whisk in flour, salt, pepper, and dry mustard. Cook for 3 to 4 minutes until flour is golden and has a nutty aroma.
- Add beer, whisking constantly, until mixture thickens a little, about 2 minutes.
- Add chicken broth and milk and stir. Bring to a boil, then reduce heat to simmer for 5 to 10 minutes until it thickens.
- Remove from heat and stir in cheeses, Worcestershire, and ham.
- Serve garnished with bacon, green onions, and shredded cheddar.
Another wonderful fall soup is this Slow Cooker Sausage and Corn Chowder - if you love corn, this soup is definitely going to be a new favorite for you. I think my jaw hit the floor when I found this Bacon Beer Cheese Soup with Chicken from The Slow Roasted Italian. It looks INCREDIBLE.
