I remember when I found this recipe how ridiculously excited I was. I love shepherd's pie and don't make it nearly enough and green bean casserole really only appears a few times a year at big holidays like Thanksgiving, Christmas, and Easter. Why is that? It's much too good to only be made that few times a year. I was a little weary of using instant potatoes because I've never been a huge fan of them (unless my mother-in-law makes them and works her magic to make them taste real), but I was surprised at the flavor of the garlic mashed potatoes. If I'm being honest, I'd still rather make real mashed potatoes to go on this, but in a pinch, I don't mind these instant potatoes.

What you need:
  • 1 lb. ground beef
  • 1 can (14 oz.) cut green beans, drained
  • 1 can (10 oz.) cream of mushroom soup
  • 1 clove minced garlic
  • 2 packets (4 oz. each) Idaho Spuds Roasted Garlic Mashed Potatoes
  • 4 cups water
  • 1/2 cup French fried onions
  • 1 cup shredded cheddar cheese
Directions:
  1. Brown ground beef in a large skillet, drain if needed.
  2. Add green beans, soup, and garlic. Simmer on low for about 5 minutes.
  3. Meanwhile, in a large saucepan, bring water to a boil.
  4. Add mashed potato packets and then remove from heat. Fluff with a fork.
  5. In a square baking dish, pour ground beef mixture and spread evenly. Then top with mashed potatoes evenly. Top with onions.
  6. Bake in a preheated 350 degree oven for 20 minutes.
  7. Remove from oven and top with cheddar cheese.
  8. Bake for an additional 5 minutes. Then remove from oven and rest for 5 minutes before serving.

Green beans seem to be the perfect addition to many comfort meals and I loved them in this recipe of Chicken Tetrazzini. I'm not gonna lie this combination of shepherd's pie and tatortot hotdish, in the form of Tater Tot Shepherd's Pie from My Wholefood Family Essentials, is calling my name!
