If I could only have cheese in one form for the rest of my life, it would be in this pizza dip. Roasted tomatoes, four types of cheese, and fresh herbs make up this AMAZING appetizer. I fixed it up for New Year's Eve last year and it was easily my very favorite recipe of the night. It tastes like pizza. But gourmet and an appetizer. I think everyone else loved it too and it didn't last long. I honestly need like a bathtub filled with it. I really loved these fancy crackers with it too. They really held up well to the dip.

What you need:
  • 1 pint grape tomatoes, cut in half lengthwise
  • 1 tsp. olive oil
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1 1/2 blocks (12 oz.) cream cheese, softened
  • 8 oz. shredded mozzarella cheese
  • 8 oz. shredded provolone cheese
  • 1/4 cup shredded Parmesan
  • 4 cloves minced garlic
  • 1/4 cup fresh basil, chopped
  • 2 Tbsp. fresh thyme, chopped 
  • 1/2 Tbsp. fresh oregano, chopped
  • Crackers, toasted bread, or chips, for serving
Directions:
  1. Place tomatoes on a foil-lined baking sheet. Drizzle with olive oil and season with salt and pepper.
  2. Roast in a preheated 400 degree oven for 20 to 25 minutes or until tomatoes burst. Set aside.
  3. Meanwhile in a large bowl, mix together cream cheese with 7 oz. mozzarella and 7 oz. provolone. Then mix in 1/4 cup Parmesan. 
  4. Stir in fresh herbs, garlic, and roasted tomatoes. Then transfer to a small greased baking dish.
  5. Top with remaining mozzarella and provolone.
  6. Bake at 400 degrees for 25 to 30 minutes or until the top is golden brown and bubbly.
  7. Serve immediately with crackers, bread, or chips.
