This beautiful blueberry nut bread is the perfect spring breakfast or snack.
I used to make banana bread all the time years ago and fell out of that habit. I saved lots of fruit bread recipes back then because I adore banana bread so much and felt that other fruits had to be pretty dang good too. I was really excited about this blueberry nut bread and a little intrigued by the maple syrup aspect of it. It wasn't strongly maple flavored, which I did like, but it did have a hint of maple enough to remind me of blueberry pancakes and that made me so happy.

What you need:
- 2 cups all purpose flour
- 1/4 tsp. salt
- 3 tsp. baking powder
- 1/4 cup granulated sugar
- 1 cup fresh blueberries
- 1/2 cup walnuts or pecans, chopped
- 1/2 cup maple syrup
- 2 eggs, lightly beaten
- 3/4 cup milk
- 3 Tbsp. vegetable oil
- 1 tsp. vanilla extract
- Stir together flour, salt, baking powder, and sugar in a large bowl.
- Add blueberries and nuts and toss.
- Then add syrup, eggs, milk, oil, and vanilla to the dry mixture and stir until combined.
- Pour into a lightly greased, parchment paper lined loaf pan. Let stand for 20 minutes.
- Bake in a preheated 350 degree oven for 1 hour or until a toothpick comes out nearly clean.
Speaking of banana bread, this Blueberry Banana Bread is the best of both worlds! I have to admit that I love streusel topping on pretty much any sweets and I cannot wait to try this Blueberry Cobbler Bread from Cookies & Cups because look at that topping!
