Make Ahead Breakfast Scrambles

Easy prep and room for so much variety with these scrambles that are ready to cook in the morning!

I have never really gotten into meal prep except for the period of time where Nick was doing the keto diet and we found this recipe for breakfast scrambles. They don't take long at all to prep, are relatively inexpensive, and they don't take long to cook either. I made two different varieties: jalapeno popper and Denver omelet. You can make any variety with different vegetables, meats, and seasonings.

What you need:
For the Denver omelet scrambles:
  • Diced ham
  • Diced green bell pepper
  • Shredded sharp cheddar cheese
  • Minced onion
  • Salt and pepper
  • Italian seasoning
  • Eggs (2 per jar)
For the jalapeno popper scrambles:
  • Bacon bits
  • Diced jalapeno peppers
  • Shredded cheddar or Monterey jack cheese
  • Minced onion
  • Salt and pepper
  • Eggs (2 per jar)
Directions:
  1. Divide ingredients except eggs for each variety of scramble into mason jars. Seal and store in the refrigerator for up to a week.
  2. When ready to use, crack 2 eggs into a jar and stir to combine.
  3. Cover with a paper towel and microwave for 1 minute. Stir and continue microwaving, covered, for 30 seconds at a time until eggs are set. Our 1000 watt microwave takes a total of 2 minutes.

I like make ahead oatmeal in particular. You can make a couple in advance of these PB&J Overnight Oats. Make Ahead Breakfast Burritos from Peanut Blossom are right up my alley since I don't diet and will gladly carb up for breakfast :)
