Simple ingredients combined to make a mouth-watering stuffed pepper that you will want to eat every day for forever.
I adore stuffed peppers and try to make them at least once a month. I've also started to really enjoy cilantro and lime together and you'll probably see more and more cilantro lime recipes on the blog. These peppers are probably my all-time favorite stuffed peppers and that was a really hard place for this recipe to unseat. I had one recipe that was my favorite for many many years. The filling itself is so addictive! The pepperjack cheese is a perfect match for the cilantro lime too.

- Remove from oven and top peppers with cheese.
- Return to oven and bake, uncovered, for about 10 minutes or until cheese has melted.
I absolutely love stuffed peppers and I also love stuffed zucchini, which is why I love this Pesto Zucchini Boats recipe. I basically want all the cilantro lime I can get and this lovely Southwestern Chopped Salad with Cilantro Lime Dressing from Damn Delicious looks divine. I mean what is better than cilantro lime dressing?!
