This simple chicken recipe is not to be underestimated with lovely herbs and sauteed zucchini
I have trouble finding simple chicken recipes that I really enjoy. Sometimes I feel like the ones I really really like are complicated and time consuming. This recipe, however, is simple and is very lovely with butter, garlic, and herbs. Plus it also has zucchini and I love recipes with zucchini. I ended up also tossing in some broccoli I had on hand too and it turned out perfectly. I love how quick this recipe was without sacrificing great flavors!

What you need:
- 3 Tbsp. unsalted butter
- 4 cloves minced garlic
- 1/4 cup fresh oregano, chopped
- 1 tsp. fresh rosemary, choppped
- A couple sprigs of thyme
- 1 lb. boneless, skinless chicken breasts
- Salt and pepper
- 2 medium zucchini, sliced
- In a medium skillet, melt butter over medium-high heat.
- Add garlic, oregano, rosemary, and thyme.
- Add chicken and cook for 3 to 4 minutes or until chicken is cooked through. Remove from skillet and keep warm.
- Add zucchini to skillet and season with salt and pepper. Saute for 2 to 3 minutes or until tender.
- Add chicken back to pan to heat for a minute or two. Serve immediately.
