This recipe is divine with Cajun chicken, creamy alfredo-like sauce, and pasta!
Another 30-minute meal to the rescue! I seriously love pasta dishes like this one. It's a quick recipe for a busy weeknight and it's packed with delicious flavors that aren't hard to achieve. I typically have most all these ingredients on hand too, so it's definitely something that can be made on a night where I have no plans (which is very rarely, but does occasionally happen).

What you need:
- 8 oz. penne pasta
- 2 Tbsp. EVOO
- 2 chicken breasts, butterflied or pounded thin
- 1 1/2 Tbsp. cajun seasoning, divided
- 2 Tbsp. unsalted butter
- 2 cloves minced garlic
- 1 Tbsp. all purpose flour
- 1 1/2 cups half and half
- 1/3 cup shredded Parmesan cheese, plus some for topping
- Salt and pepper to taste
- 1 roma tomato, diced
- Fresh parsley, chopped
- Cook pasta according to package directions. Drain.
- Meanwhile, heat olive oil over medium heat in a large skillet.
- Season chicken with 1 Tbsp. of Cajun seasoning and add to skillet. Cook on each side until browned and chicken is cooked through.
- Remove from skillet. Clean it and return it to medium heat.
- Add butter and melt. Then add garlic and saute for 30 seconds.
- Add flour and cook, whisking for 30 seconds.
- Slowly whisk in half and half, a tablespoon at a time to start until about 1/2 cup has been added, then you can add a little more at a time.
- Stir in Parmesan cheese and stir until melted.
- Add 1/2 Tbsp. cajun seasoning. Season with salt and pepper.
- Add cooked penne to sauce and top with tomatoes, parsley, additional Parmesan, and chicken that has been sliced.
