No boring chicken dinners - load it up with the best seasoning mix, cheese, bacon, and onions!
Out of the many chicken dishes I've had lately. This is definitely one of the tops. I didn't know you could just buy blackening seasoning but it's one of my favorite mixes ever. If you want to make your own, I recommend this Best Ever Blackening Seasoning from A Spicy Perspective. The rest is just the perfect storm of deliciousness that is onion, bacon, and cheese.

What you need:
- 1 1/2 lb. boneless chicken breasts
- 1 tsp. blackening seasoning
- 1 yellow onion, sliced
- 6 strips bacon
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 1 cup shredded pepper jack cheese
- Fresh parsley, chopped
- Season chicken with blackening seasoning and set aside.
- In a skillet, cook bacon until crispy and then remove to a paper towel-lined plate.
- Pour all but 1 Tbsp. bacon grease into a bowl and set aside.
- Add onion, salt, and pepper to skillet with bacon grease. Cook over medium heat for about 10 minutes. Remove and set aside.
- Add more bacon grease if needed. It should cover the bottom of the skillet.
- Add chicken and cook for 8 to 9 minutes on each side or until cooked through.
- Top each chicken breast with onions and bacon. Then top with cheese.
- Broil for 2 minutes or until cheese has melted.
- Serve topped with fresh parsley.
