Loaded Blackened Chicken

No boring chicken dinners - load it up with the best seasoning mix, cheese, bacon, and onions!


Out of the many chicken dishes I've had lately. This is definitely one of the tops. I didn't know you could just buy blackening seasoning but it's one of my favorite mixes ever. If you want to make your own, I recommend this Best Ever Blackening Seasoning from A Spicy Perspective.  The rest is just the perfect storm of deliciousness that is onion, bacon, and cheese.

What you need:
  • 1 1/2 lb. boneless chicken breasts
  • 1 tsp. blackening seasoning
  • 1 yellow onion, sliced
  • 6 strips bacon
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 1 cup shredded pepper jack cheese
  • Fresh parsley, chopped
Directions:
  1. Season chicken with blackening seasoning and set aside.
  2. In a skillet, cook bacon until crispy and then remove to a paper towel-lined plate.
  3. Pour all but 1 Tbsp. bacon grease into a bowl and set aside.
  4. Add onion, salt, and pepper to skillet with bacon grease. Cook over medium heat for about 10 minutes. Remove and set aside. 
  5. Add more bacon grease if needed. It should cover the bottom of the skillet.
  6. Add chicken and cook for 8 to 9 minutes on each side or until cooked through.
  7. Top each chicken breast with onions and bacon. Then top with cheese.
  8. Broil for 2 minutes or until cheese has melted.
  9. Serve topped with fresh parsley.
