These pancakes are perfect for the winter season - and especially Christmas morning!
For the first time in a long time, I don't have a plan for Christmas morning breakfast. Sometimes I wake up really early and make cinnamon rolls. I've made donuts and casseroles. Last year, I made these pancakes. They were a huge hit and super quick. The kids enjoyed them after opening presents and I have to say that they were pretty fantastic. All the elements work together so well!

What you need:
For the pancakes:
- 1 1/2 cups self rising flour
- 1 Tbsp. granulated sugar
- 1/2 cup hot cocoa mix
- 1/4 tsp. baking soda
- 1 egg
- 1 1/4 cups buttermilk
- 2 Tbsp. unsalted butter, melted
- 1/2 tsp. peppermint extract
- 1 cup marshmallow fluff
- 2 Tbsp. half and half
- Mini marshmallows
- Crushed peppermint candies or candy canes
- In a medium mixing bowl, whisk together flour, sugar, hot cocoa mix, and baking soda.
- In a large bowl or stand mixer, mix together egg, buttermilk, butter, and peppermint extract on medium-low speed until just combined.
- Add the dry mixture a third at a time on low speed until just combined.
- Let batter rest for 5 minutes while your heat your skillet or griddle.
- Drop 1/3 cup batter for each pancake. Flip when top has bubbles. Cook until golden.
- For the glaze: Combine marshmallow cream and half and half in a small bowl. Beat until smooth.
- Serve pancakes topped with marshmallow glaze, mini marshmallows, and crushed candy canes
