Bacon Cheeseburger Tatortot Casserole

Yum doesn't even begin to cover this variation of a classic tatortot casserole!


I have made tatortot hotdish a whole lot in my many years as an adult. It was one of my favorite meals when I was a kid and I have loved how the internet has provided a place for people to share variations of what I knew to be "classic" tatortot hotdish. This recipe is one of those and it is FANTASTIC. The original recipe did not call for toppings, but if I eat a bacon cheeseburger, I want the works on it and so we topped ours with ketchup, mustard, and pickles. It was the perfect touch to this already wonderful recipe!

What you need:
  • 1 1/2 lb. ground beef
  • 1 pkg. bacon bits
  • 2 cups shredded cheddar cheese
  • 1 bag (32 oz) frozen tatortots
  • 1 can (10.75 oz) condensed cheddar cheese soup
  • 16 oz. sour cream
  • Ketchup, mustard, and pickles for serving
Directions:
  1. Cook ground beef in a large skillet over medium high heat. Drain if needed.
  2. In a large bowl, combine ground beef, bacon, cheddar cheese, tatortots, cheese soup, and sour cream.
  3. Spread into a lightly greased 9x13-inch baking pan.
  4. Bake in a preheated 350 degree oven for 45 to 50 minutes or until bubbly. 
  5. Top with ketchup, mustard, and pickles, if desired.
