Peppermint Poke Cake

This holiday cake is so easy to make and loaded with chocolate and peppermint!

I think box cake mixes are awesome and I love how you can add a few more steps and change it up completely. I think at this point everyone knows what a poke cake is - you make a cake and poke holes in it and then pour stuff on top. This cake is topped with sweetened condensed milk and hot fudge. After some chilling, the cake is topped with whipped cream and other stuff - in this case, Andes mints and Oreos. I think this is my favorite poke cake of all the ones I've made. I love mint chocolate, so I guess it's not surprising. This is a really fun cake to make with kids (if you have any around) and is perfect for the holidays!

What you need:

  • 1 box double chocolate fudge or devil's food cake, plus ingredients to prepare
  • 1 can (14 oz) sweetened condensed milk
  • 1 jar hot fudge topping, warmed
  • 8 oz. Cool Whip
  • 2 cups Andes Peppermint Bits or 1 box Andes Mints candies, chopped
  • Oreo cookies, chopped

Directions:

  1. Prepare cake in a 9x13-inch pan according to directions on box.
  2. While cake is still warm, poke holes into the top of the cake using the handle of a wooden spoon.
  3. Pour sweetened condensed milk on top followed by hot fudge.
  4. Cover and chill for 1 hour in the refrigerator.
  5. Top cooled cake with Cool Whip, Andes mints, and Oreos.
  6. Cover and chill for 3 more hours.
