When you just need a few cupcakes, this recipe comes in handy!
I made these for Mason's 5th birthday in 2020. He loves funfetti cake and since I was also making a cake for my sister-in-law whose birthday is the day after Mason's, I figured I'd make a small batch just for him. I was supposed to post the birthday cake that I made for my sister-in-law last Friday, but haven't gotten it up yet. I hope to do that soon, so if you're interested in a Take 5 cheesecake, keep your eyes peeled for that :)What you need:
For the cupcakes:
- 1 large egg
- 3 Tbsp. granulated sugar
- 3 Tbsp. vegetable oil
- 1 tsp. vanilla extract
- 1/2 cup all purpose flour
- 1/2 tsp. baking powder
- Pinch of salt
- 2 Tbsp. milk
- 2 Tbsp. confetti sprinkles, plus some for garnish
For the cake batter frosting:
- 1/2 cup unsalted butter, softened
- 1 cup powdered sugar
- 1 tsp. vanilla extract
- Pinch of salt
- 2 1/2 Tbsp. French Vanilla cake mix
- 1 to 2 Tbsp. milk
Directions:
- For the cupcakes: Combine egg, sugar, and vanilla in a large bowl with a whisk.
- Add oil and whisk in.
- Then add flour, baking powder, and salt. Stir until just combined.
- Add milk and stir gently. Then fold in sprinkles.
- Divided between three cupcake liners in a muffin pan.
- Bake it in a preheated 350 degree oven for 12 to 14 minutes or until it springs back when you press the center. Let cool completely.
- For the frosting: Beat butter with an electric mixer. Add powdered sugar and beat to combine.
- Add vanilla, pinch of salt, and cake mix. Beat together.
- Add milk, one tablespoon at a time, until it reaches a piping consistency.
- Transfer to a piping bag and pipe onto cooled cupcakes. Garnish with extra sprinkles.
