This appetizer is quick to throw into the slow cooker and ready in a few hours and it is soooo good!
I don't think I have ever had corn dip before but growing up surrounded by cornfields, I adore sweet corn and love pretty much anything with corn. I thought this recipe would be great because it's kind of a mix of jalapeno popper with corn. Honestly, what's not to love about that? I've actually made this recipe a couple times now but can never get a good picture. So this is as good as it's going to get. Excuse the pictures and just take my word for it, you won't be able to stop eating this dip!What you need:
- 4 slices bacon, diced
- 3 cans (15 oz. each) corn, drained
- 2 jalapenos, seeded and diced
- 1/2 cup sour cream
- 1 cup shredded pepper jack cheese
- 1/4 cup shredded Parmesan cheese
- Salt and pepper to taste
- 1 pkg. (8 oz.) cream cheese, cubed
- 2 Tbsp. chopped chives
Directions:
- In a large skillet over medium-high heat, add chopped bacon and cook until crispy. Transfer to a paper towel-lined plate.
- Stir together corn, jalapenos, sour cream, pepper jack cheese, and Parmesan cheese into a slow cooker. Season with salt and pepper and stir well.
- Top with cubed cream cheese.
- Cover and cook on LOW for 2 hours.
- Uncover and stir until cream cheese is well combined.
- Cover and cook on HIGH for 15 more minutes.
- Serve topped with bacon and chives with tortilla chips for dipping!
