A classic breakfast with chipped beef and rich gravy over toast.
I have always been pretty anti-gravy. However, when I was younger there was one exception: my grandma's chipped beef gravy. I had this recipe saved for so long and finally really had a craving for it and wanted it desperately. It tasted just like how I remembered and Nick and the kids loved it too, so it's definitely something we'll eat often. What you need:
- Sliced dried beef
- 4 Tbsp. unsalted butter
- 1/4 cup all-purpose flour
- 2 1/2 cups milk
- 1/4 tsp. black pepper
- Pinch of nutmeg
- Toast for serving
Directions:
- Soak beef in hot water for about 10 minutes. Then drain and chop into small pieces.
- Melt butter in a skillet over medium heat.
- Add beef and saute for 2 minutes. Remove with a slotted spoon and set aside.
- Add flour and whisk to form a roux. Cook for 1 minute.
- Slowly whisk in milk and then increase heat to bring to a simmer.
- Add beef, pepper, and nutmeg. Simmer to thicken, lower heat if needed to keep from burning.
- Serve over top of toast.
