Creamed Chipped Beef

A classic breakfast with chipped beef and rich gravy over toast.

I have always been pretty anti-gravy. However, when I was younger there was one exception: my grandma's chipped beef gravy. I had this recipe saved for so long and finally really had a craving for it and wanted it desperately. It tasted just like how I remembered and Nick and the kids loved it too, so it's definitely something we'll eat often.

What you need:

  • Sliced dried beef
  • 4 Tbsp. unsalted butter
  • 1/4 cup all-purpose flour
  • 2 1/2 cups milk
  • 1/4 tsp. black pepper
  • Pinch of nutmeg
  • Toast for serving

Directions:

  1. Soak beef in hot water for about 10 minutes. Then drain and chop into small pieces.
  2. Melt butter in a skillet over medium heat.
  3. Add beef and saute for 2 minutes. Remove with a slotted spoon and set aside.
  4. Add flour and whisk to form a roux. Cook for 1 minute.
  5. Slowly whisk in milk and then increase heat to bring to a simmer.
  6. Add beef, pepper, and nutmeg. Simmer to thicken, lower heat if needed to keep from burning.
  7. Serve over top of toast.
