Tatertot Tacos

I bookmarked these two weeks ago and I absolutely had to put them on my list of things to make ASAP. They did not disappoint in the least bit. They were so good! I never had a more delicious "taco" - you all have to try them. They were huge hits with my kids and a lot easier for them to eat too.

What you need:
  • 1 pkg. frozen tatertots or golden rounds
  • 1 lb. ground beef
  • 1 can petite diced tomatoes
  • Taco seasoning
  • Taco toppings: lettuce, cheese, sour cream, etc.
Directions:
Cook frozen tots or rounds (I love rounds - they taste better even though they are just a different shape :P).

Meanwhile, brown ground beef and drain, if needed.
Add diced tomatoes and taco seasoning. Simmer for 2 minutes.

When everything is ready to go, place some tatertots in whatever dish you are serving with, add ground beef mixture and then top with your choice of toppings!

    This reminds me of something I had at Taco Johns when I was visiting Minneapolis last winter!!!
