What you need:
Graham Cracker Pancakes:
- 1 1/4 cups all-purpose flour
- 3/4 cup very fine graham cracker crumbs
- 1 tbsp. baking powder
- 3/4 tsp. salt
- 3 tbsp. sugar
- 2 eggs, yolks and whites separated
- 1 1/2 cups milk
- 3 tbsp. vegetable oil
- 2/3 cup unsweetened cocoa
- 1 cup water
- 1 1/2 cups sugar
- 1/4 tsp. salt
- 1 cup marshmallow creme
- A few tbsp. hot water
Combine flour, crumbs, baking powder, salt, and sugar.
Add egg yolks, milk, and oil and stir just until combined.
Whip egg whites to soft peaks. I use my mixer for this. Fold into pancake batter gently.
Cook pancakes over medium heat, about 1/4 cup batter to each pancake.
In a saucepan, whisk together cocoa and water.
Add sugar and salt.
Cook over medium heat until brought to a boil. Let boil for 3 minutes and remove from heat.
In a small bowl, combine water and marshmallow creme until you get the consistency you want.

Serve pancakes topped with marshmallow sauce and chocolate syrup.
