Super Crunchy Chicken

I've been trying really hard lately to start from the beginning of my recipes. I have them in 4 binders and each set is numbered (from when I printed them out) - I'm nearly ready to print out the 9th set and put it in my 4th binder, but I want to try and weed out good and bad recipes for a "master recipe binder" so to speak. This recipe is a keeper from my first set of recipes.

What you need:
  • 1/2 cup Italian breadcrumbs
  • 2 large eggs
  • 2 tbsp. milk
  • 1 cup herb-flavored stuffing mix
  • 4 chicken breast halves
  • 1/4 cup vegetable oil
Directions:
Place Italian breadcrumbs on a plate and combine eggs and milk together in shallow bowl.

Place stuffing into a large ziploc bag and crush.

Dip chicken through breadcrumbs, then eggs, and then place in ziploc baggie and shake to coat.

Heat oil over medium heat and cook chicken on each side until golden brown and no longer pink.
