Western Omelet

This is another recipe that I have had since I started collecting recipes back in 2006/2007. Never made it until today. It's a quick, easy omelet recipe. I really liked having the potatoes. I actually had a little issue with some falling out, so I placed them on top. Any extra you have could be served on the side.

What you need:
  • 1/2 cup finely diced green bell pepper
  • 1/3 cup cubed cooked potato
  • 2 slices bacon, diced and cooked
  • 1/4 tsp. oregano
  • 2 tsp. butter
  • 3 eggs, beaten with 1 to 2 tbsp. milk
Directions:
Prepare pepper, potato, bacon, and eggs.

Melt butter over medium heat in an 8-inch skillet.

Add eggs and lift edges until almost set.
Add pepper, potato, and bacon to half. Sprinkle with oregano.

Flip empty half over filling.
Serve with salsa, if desired.
