What you need:
- 2 broccoli crowns
- Olive oil
- Salt and pepper
- 4 cloves garlic, sliced or minced
- 1 lemon, zested
- Pine nuts or almonds
- 1/3 cup Parmesan
- 2 tbsp. fresh basil, chopped
Cut broccoli into florets and then toss with olive oil and salt and pepper, to taste.
Place on a foil-lined baking sheet and sprinkle with garlic.

Roast for 20 to 25 minutes at 425*
Mix together lemon zest, pine nuts, Parmesan, and basil together with 1 1/2 tbsp. olive oil.
Toss roasted broccoli with the zest mixture and serve!

Yum, I tried making broccoli like this for the first time about two weeks ago and your right, it is delicious. My husband, who doesn't care for broccoli unless it's drowning in cheese sauce really liked it too. I was planning on posting the recipe, but it was eaten to quickly to get a shot of it. lol This is a definite keeper.
This sounds like a great way to prepare broccoli! Definitely going to have to do it this way next time =)
