I love simple recipes that pack loads of flavor and this is one of those recipes. The chicken is marinated for an hour up to overnight and you can cook it as you wish. This night in particular, I baked my chicken. It was very moist and juicy! I would love to grill it at some point - there's something about a good grilled chicken breast that can't be beat.

What you need:
- 1/3 cup EVOO
- 1/2 cup lemon juice
- 1 tsp. dried basil
- 1 tsp. dried thyme
- Chives
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 2 cloves minced garlic
- Chicken breasts
- Whisk together olive oil, lemon juice, and spices.
- Place chicken breasts into a large ziploc bag. Then pour marinade over it.
- Refrigerate for at least one hour (overnight is better - be sure to flip the bag a few times). You can also freeze it - use with a month.
- Cook chicken as desired. We baked ours, but you can also grill or pan cook it!
