Butterfinger Peanut Butter Oatmeal Cookies #FantasticalFoodFight

This month's Fantastical Food Fight theme is OATMEAL because January is National Oatmeal Month. Even though I host and plan the event, I typically don't pick my recipe until the theme is announced for everyone. I will go to my Pinterest boards and type in the ingredient or theme and see what pops up. This particular month, I was meal planning and happened to be looking for a cookie recipe for the first weekend of January and saw this Butterfinger Peanut Butter Oatmeal Cookies recipe with oatmeal in it. I immediately moved it to my meal plan board and was so excited to make it.

I have made Butterfinger Cookies from Sally's Baking Addiction before, but I really thought these looked quite good. The other ones were just a regular cookie base with candy in it. These, on the other hand, are peanut butter cookies with candy PLUS oatmeal, which is the whole reason for making them for the Food Fight! They are chewy and peanut buttery and the bits of milk chocolate chips and Butterfinger candy are the best - it's like a burst of rich chocolatey goodness!

What you need:
  • 1/2 cup salted butter, at room temperature
  • 1/2 cup light brown sugar
  • 1/4 cup granulated sugar
  • 3/4 cup creamy peanut butter
  • 1 large egg, at room temperature
  • 1 tsp. vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 tsp. baking soda
  • 1/2 cup quick oats
  • 1 cup chopped Butterfingers
  • 1/2 cup milk chocolate chips
Directions:
  1.  In a stand mixer, cream together butter and sugars together for about 3 minutes.
  2. Then add peanut butter, egg, and vanilla in that order; scraping down the side of the bowl as needed.
  3. In a medium bowl, mix together flour and baking soda. Then slowly add dry ingredients into wet ingredients and mix until just combined.
  4. Fold in quick oats, Butterfingers, and chocolate chips.
  5. If dough is too soft to handle by hand, chill for 30 minutes.
  6. Roll 2 Tbsp. of dough into balls and then place on a parchment paper or silicone mat lined baking sheet.
  7. Bake in a preheated 350 degree oven for 8 to 10 minutes - no longer than 10 minutes. Gently press down each cookie with a fork or back of a spoon.
  8. Allow to cool for 10 minutes and then remove to a wire rack to cool completely.
